Placinta cu pleurotus, stevie si leurda – Oyster mushrooms, greens and wild garlic pie

Am gatit aceasta reteta pentru Paste si a iesit ceva bun. O recomand cu incredere pentru lacto-vegetarieni, se face usor si este foarte consistenta.

 

Ingrediente (6-8 portii):

  • 1 kg pleurotus, spalat bine, taiat fasii;
  • 2 legaturi frunze de stevie, bine spalate, tocate;
  • 1 legatura leurda, spalata, toccata;
  • 300g smantana sau iaurt in stil grecesc;
  • 2 linguri pesmet;
  • 2 oua;
  • Cascaval ras;
  • Aluat de foietaj 800g;
  • Sare, piper, oregano.

 

Intr-o tigaie adanca puneti la foc ciupercile. Lasati pana se inmoaie si scad. Adaugati verdeturile, lasati cateva minute sa se inmoaie. Aruncati excesul de apa. Opriti focul si amestecati in tigaie smantana/iaurtul grecesc, pesmetul, ouale, cascavalul, sare, piper si oregano dupa gust. Amestecati totul bine si lasati sa se raceasca. Incalziti cuptorul la 200C, taiati aluatul in doua foi. Intr-un vas potrivit pentru cuptor, puneti hartie de copt, apoi prima foaie de aluat, umplutura, a doua foaie de aluat. Puteti face diverse modele pe aluat. Lasati la cuptor circa 30 minute (pana devine auriu). Pofta buna!

I cooked this recipe for Easter and it came out good. I recommend it for lacto-vegetarians, it’s easy to cook and very hearty.

 

Ingredients (for 6 to 8):

  • 1 kg pleurotus (oyster) mushrooms;
  • 2 bunches garden patience dock leaves;
  • 1 bunch wild wood garlic;
  • 300g cream or Greek style yoghurt;
  • 2 tablespoons breadcrumbs;
  • 2 eggs;
  • Grated cheese;
  • Puff pastry 800g;
  • Salt, pepper, oregano.

In a deep pan cook the mushrooms. Let them until they soften. Add the greens, let them a couple of minutes to wilt. Throw away the water excess. Remove from fire and mix in the pan the cream/Greek yoghurt, the breadcrumbs, eggs, cheese, salt, pepper and oregano. Mix everything well and set aside to cool. Heat the oven at 200C and divide the pastry in two. In an ovenproof dish lay some baking paper, then first sheet of pastry, then filling, the second sheet of pastry. Bake for 30 minutes or so (until golden). Enjoy!
