Piept de pui cu rubarba – Chicken Breast with Rhubarb

Ingrediente:

  • 600g piept de pui, spalat, taiat fasii;
  • Un castron cu rubarba, spalata, curatata, taiata cubulete;
  • 1/3 ceasca zahar;
  • 1 lingura si jumatate de amidon;
  • 1 ½ ceasca apa;
  • O lingura suc de lamaie;
  • Scortisoara, nucsoara, sare, piper dupa gust.

Opriti focul. Pofta buna!

I had some extra rhubarb and I decided to cook some chicken breast with it. I found some recipes on the internet which I compiled a bit. This is the result:

Ingredients:

  • 600g chicken breast, washed, diced;
  • A bowl of washed, trimmed, diced rhubarb;
  • 1/3 cup of sugar;
  • 1 ½ tablespoon cornstarch;
  • 1 ½ cup of water;
  • 1 tbsp. lemon juice;
  • Cinnamon, nutmeg, salt, pepper according to taste.

Heat a large pan, cook the chicken breast until it’s golden in a bit of oil. Remove in a bowl. Put the rhubarb in the pan with the sugar, cornstarch and the water and cook, stirring, until it boils. Let it simmer on low heat until the rhubarb softens and the sauce is reduced a bit. Add the cooked breat and mix well, season with cinnamon, nutmeg, salt and pepper and cook another 10 minutes, stirring from time to time. Remove from heat. Enjoy!
