Supa cu dovlecei, risoni si porumb – Zucchini, risoni and corn soup

O varianta de supa foarte gustoasa, fara carne.

Ingrediente:

  • o ceapa mica, tocata marunt;
  • doi sau trei dovlecei/zucchini mici, cuburi;
  • 100g risoni sau orzo;
  • o mana frunze de spanac sau sfecla, spalate bine, taiate;
  • o cutie porumb dulce boabe;
  • sare, piper, Mirodenia;
  • maghiran sau busuioc, putin ulei de masline extravirgin.

In 2L apa care fierbe puneti ceapa, o lingurita de sare, lasati 5 minute si adaugati in oala dovleceii/zucchini taiati cuburi si pastele risoni/orzo. Fierbeti neacoperit 15 minute, adaugati frunzele si mai lasati sa fiarba 5-7 minute. Asezonati dupa gust cu sare, piper, optional Mirodenia. Adaugati maghiran sau busuioc. Opriti focul, adaugati porumbul, amestecati si adaugati putin ulei de masline extravirgin.

Se poate servi ca atare sau cu iaurt grecesc. Pofta buna!

supa cu porumb si risoni

A very tasty soup, without meat.

Ingredients:

  • one small onion, finely chopped;
  • two or three smaller zucchini, diced;
  • 100g risoni/orzo;
  • a handful of spinach or silverbeet, washed, cut;
  • a can of sweetcorn;
  • salt, pepper;
  • marjoram or basil, a little olive oil.

In 2L boiling water put the onion, a teaspoon of salt, let it simmer 5 minutes then add zucchini and the risoni/orzo pasta. Boil uncovered for 15 minutes, add the leaves and let it simmer for another 5-7 minutes. Season with salt and pepper, add marjoram or basil. Remove from heat, add the corn and a drop of olive oil, stirring. You can serve it as it is or with some Greek yoghurt. Enjoy!
